This is by no means a traditional Carbonara…

The story goes that my father was told only the ingredients for a Carbonara, and this was his conclusion based on that. I’m not awfully sure how good this actually is - there’s a chance that my entire enjoyment of this meal is based on childhood memories.

Steps

  1. Gentle fry shallots and a garlic glove in butter till soft.
  2. Add lardons / bacon until crispy.
  3. Add dry white wine and simmer off for a bit.
  4. Add mixed herbs.
  5. Make a White Sauce, add lots hard cheese.
  6. Boil eggs 8 mins.
  7. Mix all together when ready.

Each component can be done earlier.
