This is by no means a traditional Carbonara…
The story goes that my father was told only the ingredients for a Carbonara, and this was his conclusion based on that. I’m not awfully sure how good this actually is - there’s a chance that my entire enjoyment of this meal is based on childhood memories.
Steps
- Gentle fry shallots and a garlic glove in butter till soft.
- Add lardons / bacon until crispy.
- Add dry white wine and simmer off for a bit.
- Add mixed herbs.
- Make a White Sauce, add lots hard cheese.
- Boil eggs 8 mins.
- Mix all together when ready.
Each component can be done earlier.
